- How do I get Twin Cakes Products?
You can order online or call to place your order, 919-306-5304, we take phone orders Monday through Saturday between 9am and 6pm, or email twins@twincakesbakery.com. Locally, we sell at the nationally known farmers market in Durham and Carrboro in North Carolina. If you live in Raleigh or surrounding areas, you may come by our facility and pick up your order. - When do you ship?
Since we are a small bakery, we ship nationally on Mondays, Tuesdays, Wednesdays, and Thursdays. Orders will not be shipped till payment is received. - What forms of payments do you accept?
Twin Cakes accepts, for local orders – cash or check, and if would like to use a credit card it will need to be pre-paid via Paypal(we would send you an email with your invoice). Online orders we only accept credit cards or debit via Paypal. - When is payment due?
If pickup up your order at our facility, you may pay with cash or check upon pickup. If using a credit card, payment is due before pickup or shipping. - What are others saying about our products?

- What if I am not home when the delivery person comes?
Twin Cakes is not responsible if the customer is not at home when packages arrives. In addition, we are not responsible if there are unfortunate circumstances (road conditions, weather, etc.) beyond our control that could prevent delivery carrier from delivering your baked goods on time. - What is your refund policy?
We do not offer refunds. Once your order leaves our facility, they are at the mercy of delivery carrier. Should a package be returned to us due to an address error on your part, you will be responsible for any re-shipping charges to resend it out again. - Where can I get your product substitutions and recipes?

- How do you care for your products?
Our baked goods are made with natural ingredients and we do not use any preservatives, therefore for ideal for freshness best consume the day they are baked. However, here are some tips on how to keep them fresh and delicious for longer periods of time.- Cookies and brownies: Our cookies taste best within 4-5 days on the counter or fridge. Brownies taste best within 3-4 days on the counter. The best way to keep cookies and brownies is individually wrapping them and placing them into an airtight container or Ziploc bag. If you prefer a warm cookie or brownie, you may place them in a microwave oven for a few seconds or in a conventional oven at 325 degrees for about 4-6 minutes. For longer shelf life, you may also freeze the individually wrapped cookies and/or brownies in an airtight container or freezer safe Ziploc bag for up to 1 month. To thaw cookies/brownies, remove from freezer and let sit on counter overnight.
- Cupcakes: The frosting will need to be kept refrigerated till ready for use. Let frosting come to room temperature and give it a good stir before frosting you cupcakes. Our cupcakes taste best consumed at room temperature and they are best enjoyed within 2 days. If cupcakes are not consumed right away, then place them in freezer for a longer shelf life. Wrap cupcakes tightly and placed in an airtight container for up to 1 month. To thaw cupcakes, remove from freezer and let sit on counter or in fridge overnight. You may place un-frosted cupcake in oven at 325 degrees for about 4-6 minutes. Let cupcake cool completely then top with frosting.
- Muffins and scones: Our muffins and scones taste best consumed within 2 days. Please leave out at room temperature wrapped tightly inside an airtight container or Ziploc bag. For longer shelf life, individually wrap item and place in freezer safe Ziploc bag or airtight container for up to 1 month. To thaw, remove from freezer and let sit at room temperature overnight. If desired warm muffin or scone, place in microwave oven for a few seconds or in a conventional oven at 325 degrees for about 4-6 minutes.
- Are you a dedicated gluten free vegan facility?
YES!! We only bake gluten-free, egg-free, and dairy-free products. In addition we are a peanut-free, corn -free, casein-free, soy-free, lactose-free facility. We do use coconut, tree nuts and sesame seeds, therefore not a tree-nut free facility, even though some products are nut-free. - Do you test your products for gluten?
Currently we do random testing using the EZ Gluten test kit. - What flours do use in your baked goods dry mixes?
It took us a year to create our blend of whole grain gluten-free flours. It DOES NOT contain the typical white rice, tapioca, and potato starch blends your commonly see. Why? Because we wanted texture, flavor, and more nutrients. We use a variety of flours: sorghum, millet, organic quinoa, amaranth, organic coconut flour, organic brown rice, arrowroot, tapioca, potato starch, and flax meal. - What is Pure2 Raw product line?

Twin Cakes dry mixes do not contain any sugar, so you get to add your favorite sweetener. Pure2raw products use a combination of stevia, dates, yacon, coconut sugar, and true raw clear agave. We never use any artificial sweeteners in our products. Please consult your doctor to determine if it is safe to consume our baked goods. - What is agave?
Agave nectar is a natural liquid sweetener made from the extract of the wild agave cactus. It has a relatively low glycemic index due to is higher proportion of fructose and lower levels of glucose. - What is Stevia?
Stevia is a natural sweetener that is a South America herb and is about 300 percent sweeter than white sugar. It has zero calories and carbs and the glycemic index is zero. - What is Yacon?
Yacon is a natural sweetener from a South American plant. It has a naturally high content of inulin, a complex sugar that breaks down slowly into fructooligosaccharides (FOS). FOS promotes the growth of healthy probiotics, which helps aid in better digestion and colon health. - What is coconut sugar?
Comes from coconut palm trees where the crystallized nectar of the coconut palm flowers, also known as palm sugar. It is naturally very low on the Glycemic Index. Palm coconut sugar serves as an ideal sugar substitute for those watching glucose levels (such as diabetics), or those monitoring lipid levels and looking for weight control. - What are dates?
Dates are known as one of the oldest fruits. It is naturally sweet and comes in a variety of flavors. Using dates as a sweetener instead of processed white sugar is good for our bodies. Dates provide fiber, potassium, thiamine, riboflavin, niacin, vitamin B6, iron, magnesium, and pantothenic acid. - What chocolate chips do you use?
The chocolate chips are free of the 8 common allergies (Enjoy Life Brand), but they do contain evaporated cane juice. - What are the fats used in Pure2raw?
Organic extra virgin coconut oil and organic cold pressed extra virgin olive oil.
Extra virgin olive oil is derived from the first pressing of the olives and has the most delicate flavor and most antioxidant benefits. Olive oil is rich in monounsaturated fat, a type of fat that researchers are discovering has excellent health benefits.The health benefits of coconut oil include hair care, skin care, stress relief, maintaining cholesterol levels, thyroid, weight loss, increased immunity, proper digestion and metabolism, relief from kidney problems, heart diseases, high blood pressure, diabetes, dental care, and bone strength. These benefits of coconut oil can be attributed to the presence of lauric acid, capric acid and caprylic acid, and its properties such as antimicrobial, antioxidant, antifungal, antibacterial, soothing, etc. The fat in coconut oil is medium-chain fatty acid, therefore breaks down quickly for energy not stored as fat.
- Are any of your products nut-free?
Twin Cakes Dry Mixes are nut-free. Some of our Pure2raw products are nut-free, but these do share equipment as our nut-based products are made on. Please note, our gluten-free flour supplier does use tree-nuts and soy in their facility and on same equipment. - What is raw- living plant based food?
Plant based food is defined as: fruit, vegetables, nuts, and seeds that are in their natural state. This means they are never cooked, processed, or altered in any way. Raw foods are ‘living foods’ that have been germinated and sprouted to provide us with abundant amounts of natural sources of vitamins, minerals, enzymes, and amino acids. These living foods are full of energy and life and help increase our own life force, which speaks to their powerful attributes, importance and the most important reason for their desirability. - What makes our crackers and flatbreads different?
- Our products are different than most things on the market because it is dehydrated to preserve all vital nutrients. They are all gluten-free! We grind up the ingredients in the crackers and flatbreads, like flax seeds, to make it easier to digest. Most flax crackers leave the flax in the whole shell form. We like to grind it up to make it easier for the body to handle all the nutrients.
- Do your products can salt?
- Good question. The only products that contain salt are the crackers, flatbreads, and snack bites. The salt we use is high quality organic sea salt. If you have questions about salt please email us at twins@twincakesabakery.com
- Is your vanilla alcohol-free?
Yes, the vanilla we use is gluten-free, vegan, alcohol-free, and sugar free. - How do you make the Pure2raw cracker dry mixes?
- They can be done in a dehydrator or oven.
